I love a good loaf.  Everything from a savoury blue cheese and bacon to a sweet lemon and poppy seed.  This loaf makes the perfect tea time snack, lunch time snack... any time snack!  The result is golden brown goodness (if a little bit darker, I quite like burnt bits!) which is perfectly moist, zesty and simply delicious.


1 1/2 cups plain flour
1 teaspoon baking powder
1/4 teaspoon salt
zest of 2 lemons
2 1/2 tablespoons poppy seeds
3/4 cup (170 grams) unsalted butter, room temperature
3/4 cup (150 grams) granulated white sugar
3 large eggs
1 teaspoon vanilla extract
1/4 cup (60 ml) milk

Butter the bottom and sides of a loaf pan.  Line the bottom of the pan with a piece of parchment or wax paper.
In a separate bowl, whisk together the flour, baking powder, salt, lemon zest, and poppy seeds .
In another bowl beat the butter until softened. Add the sugar and continue to beat until light and fluffy.
Add the eggs, one at a time.  Beat in the vanilla extract. Add the flour mixture (in three additions) and milk (in two additions) alternately.  Mix until combined. 
Scrape the batter into the prepared pan, smoothing the top with the back of a spoon.  Bake for about 50 to60 minutes, or until the bread is golden brown and a toothpick inserted in the center comes out clean.
